As you know, at OVitaminPro.com, we’re dedicated to a gluten-free lifestyle. We’ve been familiar with gluten-free diets for decades and we know the challenges that can sometimes go along with it. But, as we’ve noted before in other posts, a gluten-free lifestyle and gluten-free diet does not have to be flavorless!
In fact, we know you’ll love this flavorful gluten-free Christmas cookie recipe:
Gluten-Free Sugar Cookies
- 1/2 cup sorghum flour
- 1/2 cup tapioca flour
- 1/2 cup potato starch
- 1/4 cup sweet rice flour
- 1/2 cup amaranth flour
- 1 teaspoon xanthan gum
- 1 cup butter, softened
- 1 cup sugar
- 2 egg yolks
- 1 1/2 teaspoons gluten-free vanilla
- 1/4 teaspoon salt
In a large bowl, beat together the butter and sugar until creamy. Add the egg yolks and vanilla and continue to beat until well mixed. Then, slowly add in the flours, starch, xanthan gum and salt. Beat slowly until well mixed, then take the dough, cover it, and refrigerate for about an hour, or until firm.
Next, preheat your oven to 350 degrees. Roll out the dough to 1/4 inch thickness on a lightly floured surface (gluten-free flour, of course!). Then, cut out the dough using cookie cutters of your choice. Place the cut outs about an inch apart on an ungreased cookie sheet.
Bake for 8 to 12 minutes or until the edges of the cookies are lightly browned. Let the cookies cool on the sheets for two minutes until removing to let cool completely on a cookie rack. Once cooled, eat and enjoy!
