May is National Salad Month and it’s the perfect time to start eating more fresh fruits and vegetables. So, to help you get started, we’ve come up with a few delicious ideas for salads that you can enjoy at work, at home, or on the go. Yum!
Here are our suggestions for getting more fruits and veggies into your diet:
Simple Garden Salad: Romaine lettuce, frisee, shredded carrots, cherry tomatoes, cucumber, red onion, oil, and vinegar
Savory Endive Salad: Belgian endive, watercress, fresh corn kernels, chopped egg (optional) and lemon vinaigrette
Zesty Salsa Salad: Cucumber, red onion, lots of plum tomatoes, chopped fresh cilantro, jalapeno peppers, Boston lettuce, avocado, a twist of lime, and balsamic vinaigrette
Sweet Spinach Salad: Spinach, red onion, dried cranberries, raspberry vinaigrette and crumbled blue cheese (optional)
Fresh Fruit Salad: Peach slices, pineapple chunks, strawberries, banana, blueberries, and red grapes

broccoli cole slaw, wallnuts, (strawberry’s, manderan oranges, or crasins) chicken (optional) and soy ginger dressing – is to die for….and the easiest salad in the world to make.
Yummy! I will have to give this salad a try. Of course I would substitute the soy for gluten free Tamari!
